Gilbert Meyer, (affectionately known as Gilly to his friends and colleagues), is a well-seasoned Brisbane hospitality professional. His broad experience includes years at Brisbane’s best hotels, modern nightclubs, omakase restaurants and distillation classes. Thought of as a ‘Professor’ of cocktails to his colleagues, he is extremely well read and researched and could give you a comprehensive historical background and specs on any classic cocktail and ingredient.

During Gilbert’s time in bars, he has focused on nailing the classics and enjoys applying modern gastronomic techniques to the world of cocktails. He has a passion for unearthing, balancing, then sharing lesser-known and underappreciated flavours. Balance in cocktails is a priority for Gilbert with no cocktail of his ever being too sweet.

Gilly’s heart of gold, quick wit and down to earth persona make him a generous and entertaining educator as well as a ideal personal bartender. He considers and caters to every preference and focuses on minute details in service such as the progression of flavours between drinks and fine tuning each drink based on the response to the last. His favourite drinks are a Pornstar Martini, ‘The Last Word’ and every bartender’s favourite, the Negroni.
